Discovery of olive orchards in Provence
Our day began with a three-hour class and an excellent breakfast followed by a Provençal lunch. Then I wanted to walk a little. As I love olives, Virginie suggested a walk to the Montagne Sainte-Victoire, where there are olive orchards, in the heart of Provence. Virginie told me that in spring, the olive trees are covered with small white flowers. These flowers are essential for a good olive harvest. The orchard, with its beautiful lined trees, offered an incredible view.
The development of olives under the Provence sun
Walking among the olive trees with the Montagne Sainte-Victoire in the background, Virginie explained to me how olives grow during the summer. They are green at first, then become ripe and juicy. We observed the different stages of their maturation and learned to recognize the signs of their maturity. The warm climate and rich soils of Provence are essential for the quality of the olives.
